Songs from my Past:1. Dancing in the Moonlight by King Harvest - Okay this is the song that makes me want to skinny dip, let myhair down, dance and sing. I hope they play it at my funeral. It is hot, hot, hot.2. Edelweiss from the"Sound of Music" - I watched this with my mom so many times as a kid, and then my son watched it with my mom, and will you know it is the greatest musical ever.3. The Old Rugged Cross - I had to narrow it down to one song from church that I love. There are many, but this is one of my favorites.4. And the Grass Won't Pay No Mind - Neil Diamond. We played this song at my dad's funeral. You would have had to know him to understand why.5. King of the Road - Probably one of the first songs I remember hearing on the radio, and singing the words to. This was before FM, and when people still thought you were going to hell if you listened to rock and roll.6. Drift Away - Dobie Gray and more recently Uncle Kracker.7. We May Never Pass This Way Again - Seals and Croft. This was the class song my senior year.8. Bridge over Troubled Water - Simon and Garfunkel.9. Somewhere Over the Rainbow - Judy Garland. Bolero - Maurice Ravel/ Didn't actually learn about this one until I got to the university, I am not sure why I think it is sexy, something about the crescendo, and the way the music builds.3. *Company Executive Chef (Year round
Contract*) This is a challenging and intensive yet very rewarding role! We are looking for a dedicated and highly motivated individual. This position requires a great deal of flexibility and self-motivation. Our Consultant Chef needs to be, above all be resourceful, pro-active, sociable and happy to jump in and help in any situation. This is a managerial position that calls for a high level of practical ability and experience along with the relevant qualifications. It is a non-stop role that requires total involvement and pro-activity thus getting the very best out of our chefs in the chalets. *The Position* From our teams, we expect an attitude of “Nothing is too much trouble”. You will be expected to fulfil the following responsibilities: - Ensure that all our guests benefit from the highest possible level of “Scott Dunn” service - To go into all Scott Dunn chalets on a regular basis to ‘shadow’ chefs checking that they are coping with the work load and managing their time efficiently - To check food standards in chalets are being maintained, this will mean to cook with our chefs - To regularly check menu plans and ensure that chefs are working to budget - To regularly check Health and Hygiene standards in chalet kitchens - To be aware of the service side of the chalet, and provide on-the-spot training if required - To aid chalet chefs and hosts in wine and cheese knowledge if necessary - To aid and provide extra on-the-spot training to any weak chefs, working on a one to one basis to improve their standards. This will include working with them to assess menu plans, go through budgeting, check shopping lists and if necessary go shopping with them, suggest presentation and menu ideas, and cook with them on a daily basis to see how they are managing their day - To stand in and cook if a chef is unable to work due to illness or injury, where necessary - To liaise closely and report back to the Food & Beverage Manager on a regular basis to ensure complete communication of information - To help others with any additional duties as and when necessary *Abilities and Expectations* - Good staff relations/management and interpersonal skills - Good self-motivation - Patient, flexible, pro-active and calm - Experience of working in a ski resort - Team player *Essential Qualifications* - Recognised catering qualification - At least 3 years relevant experience - Experience in management and training staff - Hospitality or customer service experience - Full clean driving license, and confident to travel between resorts regularly For further details please contact Susanne at Scott Dunn on...
